Planet Cake Basics 101 - Box of Hearts

After a long time of wanting, wishing and waiting, I have now completed my first Planet Cake course - their new Basics 101. I travelled to Sydney for the weekend and on the night before my course walking home from dinner, I felt it was fate to find this very large cupcake in the Louis Vuitton window display.

Arriving at Planet Cake in Balmain early (as I didn't want to miss the bus and inadvertently caught an earlier one...oops), I sat in a cute little room decorated with lots of amazingly decorated cakes and busied myself reading through the new Planet Cake Celebrate book. Before I knew it we were ready to start and the whole day went so quickly with a lovely, yummy lunch provided it was 5pm before I knew it.

We were lucky enough to have a small class size, and a fantastic teacher Chris. I learnt quite a few new hints and tips, and most of all improved my ganaching and covering techniques to be rid of those pesky "elephant skin" areas I sometimes get in fondant. Paris Cutler was teaching a Biz Whiz course on the same day and in the afternoon, came into our class to say hello and have a look at our box of hearts cakes.

Not wanting to waste any of my time in Sydney, I went to the theatre to see the musical "Annie" on Saturday night, and was up early on Sunday morning for a walk around Circular Quay for a bite of breakfast and to see the Sydney Harbour Bridge and the Opera House. Yummy blueberry pancakes with mascarpone cheese, strawberries and maple syrup is the right way to start the day...well sometimes.

Carrying a heavy mudcake through public transport and airports is not an easy feat with one hand dragging along a bag, but I managed to cart it home to Mackay and eat a huge slice on Sunday night. All in a weekends work!
