Magnetic Island Wedding Extravaganza




Holidays are a concept that I wholeheartedly agree with. Whether they be to relax, explore, try new things or see new places...I'm in. After a three week holiday involving a trip to the beautiful New Zealand South Island you would think I would be done for a while, however how could one pass up the opportunity for a weekend escape to an island off the North Queensland coast. Certainly not me haha.



I was asked to make the wedding cake for a friends sister who was having a destination wedding at Magnetic Island. Her vision was of roses and lace and pearls and all things nice. Mostly white with splashes of pink, peach, cream and purple.

Scrumptious marble mud cake filled with white chocolate ganache and covered in dark chocolate ganache made up all three 6, 8 and 10 inch cakes. Perched atop the gorgeous white iron and glass stand featuring crystal bead decorations which gave perfect height to the cake.



Both the lace and the pearls were made using First Impressions silicone moulds. Patience is required for cutting around the edge of the lace with an x-acto knife! The roses were handmade like this using fondant mixed with tylose and the Jem easy rose cutters, then left to dry overnight.

The main obstacle with this cake was transport. Magnetic island is situated off the Townsville coast 400km from my home in Mackay and is reached by a car ferry. Battling sun and heat with good air-conditioning (it may not be summer yet but this is Queensland!), the cakes arrived safe and sound for me to stack at the venue.


I also made 36 mini cupcakes in red velvet, orange poppy seed and gluten free plum and almond for the reception decorated with frosting swirls and mini roses. Alas, I forgot to take pictures and they weren't setup on stands until later in the evening. I might simply have to make them again for a photo opportunity and to share the recipes.


How is that for a view from the apartment balcony! With the work done, the rest of the weekend was filled with enjoying the sun and heat by the resort pool, swimming and a bushwalk meeting a few local residents.
